Throughout the mountains of Madari and Papoutsa, and in parts of Machairas, the rambling patches of pine, olive and bay trees are interspersed with pretty villages of white-and-terracotta houses, and these are home to the Cypriot vintners of Pitsilia, who tend the little, hillside vineyards and produce the island's best wine – not to be sniffed at (figuratively speaking) on an international scale, either. The altitude and sloping nature of this growing region means that the grapes – largely the indigenous and ancient red Mavro variety - mature slowly to produce a rich flavour. The rare and distinctive Maratheftiko grapes (locally called 'Vambakina') are also grown here, and with the increasing success of smaller, boutique wine producers in recent years, you might be lucky enough to find a really special bottle for yourself as you meander along the quiet roads in the sun.
