Les Baux, named for the large presence of Bauxite, is situated on a plateau that can only be reached by foot, with spectacular views. Human occupation of this area dates back to 6,000 B.C., making Le Baux's history a rich and ancient one. During the 15th century, Les Baux was a place of revolts and religious wars but was a prosperous town by the 16th century. Today, the remains of a castle which was destroyed in 1632 can still be visited. Les Baux is known as one of the most beautiful mountain villages in France but it only has a few local residents, and thousands of tourists. Its romantic appeal, therefore, is best appreciated off season or at night, when it is lit up, and plays host to some spectacular dining experiences.
