The Cinta Senese pig is an ancient breed that was at one time near extinction. On our trip through Tuscany we made it a point to locate this pig or at least the meat so we could prepare a few dishes. We were sent on a wild goose chase from one location to another. No butcher was able to get us the product to cook with so we had to go to the source.

Casamonti Estate is located in the Chianti region, the owners, with a few other people and organizations pretty much singlehandedly brought this breed back from the dead to flourish in this area. They also grow olives for olive oil and grapes for the wonderful Chianti wine. We spent a wonderful day at the estate and encourage anyone in the area to stop in, take a tour of the grounds and stay for lunch and a wine tasting. They also have rooms to let.
