For those who feel that supermarket smoked ham isn’t smoky enough, that smoked salmon tastes suspiciously un-smoked and that no evening is complete without the gravely tones of Smokey Robinson, Bluebell croft runs home-smoking courses covering all things smoky so you can learn how to get the flavours you really want, (although don’t get your hopes up about the Motown soundtrack).
The croft is set in six and a half acres of land at the foot of Sgurr Domhnuill near Fort William in Scotland. The couple that run the place, Bill and Sukie Barber, have extensive organic vegetable gardens, organically reared livestock and most importantly a serious passion for home-smoking. On the course you’ll learn how to build a smoker, generate the right kind of smoke, how to brine and cure the fish and meat for smoking and then of course the all important smoking and then eating. Despite the rustic surroundings, the croft has five star cottages and you can expect to eat some gorgeous organic food. If it’s all getting a bit too smoky, you can also try some Aga cookery, or just laze around in your cottage hot tub.
