Michelin-starred Noma, is a restaurant that promotes “Scandinavian cooking as something to celebrate and explore” (independent.co.uk). The food served in Noma incorporates ingredients so passionately sourced, the end result is dishes that are ingeniously contemporary, yet that still “stir ancient taste-memories in the far reaches of the brain”(independent.co.uk). Noma is the creation of Claus Meyer and chef Rene Redzepi, who brings Nordic cuisine alive by the sourcing of phenomenal fresh produce. Horse mussels, deep-sea crabs and langoustines from the Faeroe Islands or musk ox and berries from Greenland are just some of the remarkable ingredients which achieve Noma’s aim of “paying careful attention to the qualities in our culinary legacy”(noma.dk). The restaurant itself is set in an renovated warehouse at the end of a dock on the man-made island Christianhavn. Far from being a fussy white-linened dining room, Noma is all about exposed brick walls, wooden floor and top quality materials like smoked oak, leather and stone which have created a space with “roots in a long tradition based on fine craftsmanship and quality” (noma.dk).
