In the midst of Vienna's beauty and romance, on the very site where Antonio Vivaldi's house once stood, a cake of unreasonable deliciousness is made, at the Hotel Sacher. It was invented by Franz Sacher in 1832, in honour of Prince Metternich, an eminent and well-liked politician of his day, and the recipe is, of course, a secret. Much imitated but, it is said, never quite trumped in terms of tastiness, it consists of two layers of thickly-textured chocolate sponge, sandwiching a layer of sweet apricot jam and covered in chocolate icing. A hundred per cent organic and preservative-free, it is traditionally served with unsweetened whipped cream and a cup of coffee. Accept no imitations and order some online!
