The main square in Morocco is quiet during the day and there are only a few stalls selling dried fruits and the orange juice that the square is famous for. But at night the place transforms into a smoky, bustling open-air restaurant teeming with food stalls, snake charmers, henna artists and storytellers. The key is to take your time. The square has become very touristy with street performers and food stall owners alike pouncing on your to get your business, but there’s no rush. Wander around the food stalls looking out for where the locals are eating and bargaining with the stall owners to get a better deal. The stalls sell spicy lamb brochettes, sausages, vegetable tajines, couscous, bean stew, fried fish and much more, all of which you can watch being cooked whilst perching on a little stool next to the stand and sipping a cup of peppermint tea. Although it’s a night market, don’t go too late as the lack of running water means the plates and cutlery get washed in the same water all night.
