Ms Vy is the notorious figure behind four of the best restaurants in Vietnam and at her most recently opened restaurant ‘Morning Glory’ she runs a master cooking class in Vietnamese food teaching us mere mortals to produce crispy spring rolls, banh bao (white roses); translucent pastry gathered round a prawn centre, and golden fried wontons filled with crabmeat and prawns and covered with a thick tomato and onion sauce. And these are just the starters. If you embark on a full day of cooking with Ms. Vy in the elegant French colonial kitchens with views over the roof tops of the old town in Hoi An, you’ll be taken through specialties such as tuna with saffron, Chao Tom (prawns with sugar cane) and green papaya with peanuts and prawns. You’ll also get the chance to go to the local markets with the team and discover weird and wonderful Vietnamese produce that you might not have noticed before and then after you’ve finished cooking (if you’ve got any room left) you can eat in the restaurant and try some of Ms. Vy’s own creations accompanied with a cool cocktail.
