The Pimenta cooking school takes place in a family kitchen in the midst of a seven acre spice plantation in the foothills of Kerala’s Western Ghats. It’s rough and ready accommodation and facilities but it doesn’t get more authentic than this. All the ingredients that are used in the kitchen are from local suppliers and many are produced in the plantation itself. The school won’t just teach you to cook the dishes, but will help you understand the flavours and give you ideas of how to produce the authentic home-cooked Keralan food when you’re back in your home and don’t have access to the same ingredients. As well as creating coconutty curries, you’ll also get the chance to visit the plantations and local markets, see elephants being trained at a local centre, visit the Keralan hills and tea growing areas and local temples and churches. This is definitely a back to basics course, but to our palates, even the basic flavours of Keralan cuisine are exotic.
