Swinton Park Hotel is a 30 bedroom castle in Yorkshire that has an AA three-rosette rating and a cooking school with standards to match. It’s certainly a strange place to have a cooking school, but the Georgian stables, set in the North York Moors, attracts some of Britain’s best cooking talent and runs courses on dinner party cooking, modern British Mediterranean cooking and even though it’s a bit far from the sea; fish and seafood cooking. In 2008 Rosemary Shrager is the celebrity chef and she’ll show you the basics on filleting and boning, baking, sauces and soufflés and patisserie as well as how to whip up a gourmet feast. Expect dishes like seared sea bass with saffron risotto and roast duck breast with Jerusalem artichoke dauphinoise, pakchoi, ginger and walnuts, which you’ll cook from locally sourced produce. You’ll also get input from a team of farmers and gardeners who will explain how to get the best produce or even grow your own vegetables. And after getting hot and steamy in the kitchen, you relax by getting hot and steamy in the hotel spa.
