Forget Old El Paso, the Mexican cuisine you learn to cook at Sazon is serious stuff. You’ll be rifling through tons of different kinds of chilies, learning to use indigenous ingredients like nopales (cacti) and huitlacoche (corn fungus) to produce authentic Mexican fare that would put those red and yellow packets to shame. Because Sazon is owned by the fancy Orient-Express hotel chain, it employs famous chefs from all over the world to come and teach at it’s classes where you’ll learn to cook Mexican staples like chilaquiles; fried tortillas topped with cheese and a smoky chipotle sauce, and Latin desserts like pastel tres leches; a cake soaked in fresh, condensed and evaporated milk. There are also trips to the local Mercado where you’ll be given tips on how to choose the best produce as well as the chance to ogle the sheer quantity of herbs, chilies and tomatillos that are abundant in Mexico. And all this takes place in the beautiful historic town in San Miguel de Allende which is packed with gorgeous colonial architecture and culture. Great food, great surroundings and no more need for Old El Paso.
