what is the correct nomenclature of english cooking mint

Which is the correct botanical name for the mint we make mint sauce or mint jelly from? Research seems to repeatedly go back to spearmint which I am sure is not correct as spearmint tastes horrid in cooking. So it is mentha ?? It is a puzzle. Thank you
